Super Spinach Smoothie

This smoothie is becoming a weekly feature in my house because it is packed full of goodness, so it feels super healthy, but it tastes like a treat (I think it tastes like ice cream).

Spinach is rich in iron, which plays a central role in the function of red blood cells which help in transporting oxygen around the body and energy production. Spinach is also an excellent source of vitamin K, vitamin A, vitamin C and folic acid as well as being a good source of manganese, magnesium, iron and vitamin B2. Vitamin K is important for maintaining bone health and it is difficult to find vegetables richer in vitamin K than spinach. I like to freeze the pineapple before adding it to the mix because it tastes even more delicious and refreshing when chilled. And it’s so quick and simple; all you need is a blender or food processor…

Ingredients:

4 big handfuls of spinach
4 big handfuls of pineapple chunks (frozen if preferred)
2 apples (chopped)
The fresh juice of one large lemon

Instructions:

1. Wash and prepare all ingredients
2. Blend everything together
3. Serve immediately in a tall glass with a straw (add ice or water to achieve preferred consistency)
